Job DescriptionEl Encanto, A Belmond Hotel, has been

for todays luxury-seeking guest.We are seeking a passionate and
dynamic Executive Sous Chef to be part of our team. This individual
will report to the Executive Chef and utilize his/her culinary and
managerial skills to maintain and enhance our guests satisfaction.
In addition, responsibilities will include managing and training
kitchen staff, establishing schedules, assessing staffs
performance, ordering supplies to stock inventory appropriately,
complying with and enforcing sanitation regulations and safety
standards, and maintaining a positive and professional approach
with coworkers and guests.RequirementsRequires a Bachelors Degree
(B.A.) for a four year college or university, or three years of
related experience and/or training, or equivalent combination of
education and experience. Minimum of three years Sous Chef
experience in a high-volume, Four-Diamond, Four Star, multi-outlet
Food and Beverage operation. Two years prior inventory/cost control
experience. Social Banquet experience a must. Well-rounded food
background with extensive knowledge of all kitchen equipment.
Demonstrated proficiency in butchery, pastry and garde manger.
Knowledge of proper food handling, sanitation regulations and
preparation procedures. Knowledge of Health Department regulations
and state, local, Food Safety, MSDS and OSHA. Knowledge of American
Cuisine and fresh fair as they relate to and are the inspiration
for our HCC food concepts. Knowledge of proper food handling,

well-groomed appearance. Excellent communication and math
analyzation skills. Prioritizing, working under pressure and

fluent conversational English. Ability to read and interpret
documents such as recipes, memos, safety rules, operating and
maintenance instructions and procedure manuals. Ability to write
routine reports and requisitions. Effectively present information
in one-on-one and small group situations to customers, clients, and
other employees of the organization. Demonstrates a positive
