Job Description:
The Bear and Star restaurant located in Los Olivos, Ca. is
currently looking for an Executive Sous Chef to join our team! Over
the last two years The Bear and Star and Fess Parker Ranch have
gained numerous accolades for their innovative Ranch to Table
experience. As our restaurant and catering business continues to
grow we are looking for an exceptional culinary leader to join our
team. This position will work directly with Chefs John Cox and
Trenton Shank on overseeing restaurant and banquet operations. The
Bear and Star prides itself in providing an inspiring and
educational environment for our team. In addition to an industry

The Bear and Star is far more than just a restaurant, we are on a
715 acre Wagyu Cattle Ranch with our own flock of lamb, mushroom

Oversee all aspects of restaurant and banquet operations in absence
of Chef. - Directly responsible for ordering, schedule and payroll.
- Oversight of stewarding department and overall restaurant
sanitation. - Oversee quality and consistency of all menu items. -
Train and instruct cooks on all culinary techniques and SOPs. -
Assist with banquets and off-property events as directed. - Create
daily production lists for team. - Enforce opening and closing
procedures and standards. - Assign daily cleaning projects and deep
cleaning schedules. - Perform menu costing and review vendor
pricing. - Be able to communicate clearly with guests and address
any special requests. - Assist in training FOH and conducting
Pre-Service as directed. Desired Qualifications - 5 Years of Sous
Chef or Chef experience. - Proven track record overseeing
multi-outlet operation or high-volume restaurants. - Fine Dining
Experience. - Advanced knowledge of national restaurant trends and
modern techniques. - Mastery of all basic culinary techniques:
Fermentation, Butchery, Sauce Work, Seafood prep, BBQ etc - Desire
to learn new skills and techniques. - Strong communication skills.
- Proficiency with spreadsheets, word processing and other computer
programs. - Advanced organizational skills. We offer a full
