JOB SUMMARY: The Food & Beverage Manager of Blackbird is responsible for working closely with the Director of Food & Beverage and other Restaurant Managers and will be responsible for all aspects of the restaurant and bar service functions in accordance with hotel standards. The successful candidate will direct, implement, and maintain the hotels ultra-luxury service standards and management philosophies, supervise and train staff, and perform administrative duties as needed. JOB RESPONSIBILITIES: Communicate effectively with all guests, team members and resort departments. Anticipate guest needs by being proactive in developing, training and maintaining quality standards. Motivate restaurant/bar management and staff and maintain a cohesive team. Maintain complete knowledge of all beverage selections available in the restaurant as well as ingredients and presentation standards for all menu items and daily specials. Maintain up to date knowledge of and abide by all state liquor regulations. Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Constantly monitor staff performance in all phases of service and job functions, ensuring that all departmental standards are maintained; rectify any deficiencies through training and development of staff. Handle all POS functions and daily closing tasks in accordance with departmental procedures. Ensure security and confidentiality of guest and hotel information Attends all required meetings and training. Assists with the development of the annual departmental operating budget, staffing guidelines and capital expenditures as related to the Food and Beverage department. Performs other duties as assigned by Department Manager and Managing Director. SKILLS AND EDUCATION REQUIREMENTS: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required Ability to satisfactorily communicate in English. Ability to think clearly and remain calm under pressure, making sound and logical decisions quickly. Planning and organizational ability with attention to detail and documentation. Able to work nights, weekends and holidays when business needs dictate. Knowledge of various food service styles (i.e., French service, American service, butler style service) and various drink recipes and beverage standards. Familiarity with food and beverage cost controls. In-depth knowledge of Wine and Spirits. Food Handlers Certificate. Certification in alcohol awareness program (TIPS). Proficiency in Microsoft Office and Micros. Knowledge of Open Table restaurant reservation software system is desired QUALIFICATIONS: Ability to perform essential job duties with or without reasonable accommodation and without posing a direct threat to the safety or health of employee or others.
